This heatwave has been rather torturous on produce.. I've been craving fruit (which is odd for me) but so far everything has tasted more or less like plastic - (except some Michigan cherries that were really good..) So what to cook with when all your produce looks rather wilted? Ah ..firecracker tofu.
Heat oil in wok with garlic & ginger - add dried red chili peppers, chili paste - ..then after a minute add a lb of cubed tofu with 1/3 cup water/veg broth, 2 tbs shoyu (soy sauce), 2 tsp sesame oil After a minute add 1 tsp cornstarch dissolved in 1 tsp cold water..
I also made beef 'seitan' with broccoli - (Seitan is also called gluten , it's made from the protein part of wheat & is popular in vegetarian Buddhist cooking. Seitan can look like this: http://www.galaxia-alfa.com/receitas/images/articles/seitanbatatas I make my Seitan in a pressure cooker & it's very easy.. anyone wants a recipe I'll post it.) Best of all - Leigh really liked it and had the leftovers for lunch today ^-^
